Pumpkin Cranberry Cake with Orange Cream Cheese Frosting


Is it getting to be too late to post pumpkin recipes? I sure hope not cause this is a really delicious one. While the original recipe called them bars, I found this more to be a cake. My reasoning was the cake was so moist that it was hard to cut it into actual bars and have them not get a little messy. Either way it is super tasty.

A quick note: I halved the recipes and baked it in a 8"x11" pan.

Pumpkin Cranberry Cake with Orange Cream Cheese Frosting
Makes a 15"x10" pan

Bars:

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 (15 ounce) can pumpkin puree, not pie filling
  • 3/4 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 3/4 cup dried cranberries, chopped

Frosting:

  • 2 8-ounce packages chilled cream cheese
  • 4 tablespoons unsalted butter, room temperature
  • 2 cups powdered sugar
  • 1 heaping tablespoon grated orange peel
  • 1 teaspoon vanilla extract


For the bars:

1. Preheat oven to 350 degrees F.

2. In a large bowl, mix together first 7 ingredients. Stir in pumpkin, butter, eggs & vanilla until well blended. Stir in cranberries, then spread mixture into an ungreased 15"x10" jellyroll baking pan.

3. Bake 20-25 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.

For the frosting:

1. Using electric mixer, beat cream cheese and butter in large bowl until well blended. Beat in sugar, then orange peel and vanilla. If needed, cover and refrigerate until frosting is firm enough to spread, about 30 minutes.

Best Ever Sloppy Joes


Okay here we go folks. This is without a doubt the best recipe I have for Sloppy Joes which comes from my mom. Even better than the Slow Cooker Sloppy Joes, which are convenient but I will admit, these just taste better. I love to add a slice of American cheese to my sandwich or if that doesn't strike your fancy, a tiny spoonful of of sour cream. For the purists, it is delicious just on its own.

Best Ever Sloppy Joes
Makes several

  • 1 lb. ground beef
  • 1 medium onion
  • 1 Tbsp. mustard
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. sugar
  • 1 Tbsp. vinegar
  • 3/4 c. ketchup
  • 1 tsp. salt
  • 1/2 c. chopped green or red bell peppers
  • 1/2 c. chopped celery

1. Cook ground beef and chopped onion. Drain fat off meat. Add back to large pan. Add remaining ingredients. Mix. Reduce heat to low and cook 40 minutes. Serve with fresh bakery buns.

Great Grandma's Famous Jimmy Cake


One of my favorite desserts of all time is a family recipe my mom has been making since..well..forever. If you are wondering, jimmies are chocolate sprinkles which are mixed into this moist cake, giving it a hint of chocolate which pairs well with a light coffee flavor.

My mom is a great cook and I have to say of all the great recipes she has made, this is probably in my top 3. Enjoy it with a cup of coffee for breakfast or dessert. 

On a side note, my apologies for the lack of posts this week. My son had eye surgery early in the week, then we had a giant Spring cleaning which lasted a few days, so I have been slackin' on updating the ol' blog.

Simple Summer Fruit Salad


I must admit that I have been making the same Marshmallow Fruit Salad recipe for my entire life. It is a classic and deeelish. For Easter, though, I wanted to branch out and try new recipes and this recipe for Simple Summer Fruit Salad from Real Mom Kitchen looked perfect. If you are on the hunt for a fruit salad recipe I recommend trying this one out.

One note would be to make it the day you are going to serve it and try to finish any leftovers the first day or so. I thought it tasted much better fresh. I would also add marshmallows next time around and play around with different flavors of jello pudding to add. Delicious!

Quick Summer Fruit Salad
Makes many servings

  • 1 (5.1 oz) pkg vanilla instant pudding
  • 1 (20 oz) can pineapple tidbits with juice
  • 1 lb. fresh strawberries, quartered
  • 1 cup fresh blueberries (optional, I think marshmallows would be a yummy substitution)
  • 3 bananas, sliced

1. In a bowl combine the pudding mix and canned pineapple with the juice.  Stir until well blended and all the pudding mixture has dissolved.
2. Fold in the strawberries and blueberries if desired.  Refrigerate for at least 1 hour.
3. Just before serving, fold in the sliced bananas.
