Slow Cooker Brown Sugar Garlic Chicken


I paired this delicious brown sugar garlic chicken with Sam Choy's Yakisoba Noodles which I buy at Costco. I would highly recommend looking for this at the store, or something similar.

This is the sort of chicken that I would not want to eat just by itself, rather it needs the flavor and crunch of Yakisoba noodles and vegetables. You could also put it over sticky rice and steamed vegetables. I love the noodles since you can easily microwave a pouch and it is delicious and filling.

Slow Cookers can be fussy sometimes, a bit like ovens. Some models run much more hot, maybe a lid doesn't fit tightly on top and too much steam escapes and you end up with dry chicken. Knowing your appliances is important in cooking. If you have noticed that your food turns out too tough or dry when you cook on high (which is exactly what happens to me), know to cook it on low and maybe check it early to see if it is cooking faster than expected.

This recipe got mixed reviews from the site I found it at, Six Sisters' Stuff. I thought it turned out delicious when paired with the Yakisoba noodles. To me they are important to the success of the dish. If you try it without them please let me know how it turned out for you.

Strawberry Scones






Delicious, tender scones with a sweet strawberry glaze. I thought these were better on day two. They held together a bit better and were nice and moist. Normally I cut scones into triangles but this time around I went with rounds and I really like the shape better. They seem to have less burnt edges this way.

I adapted a recipe found at Heather Cristo for this recipe. I simplified her recipe a bit and I loved the result. Enjoy!

Chocolate and Mint Oreo Cupcakes

Mexican Street Corn Pasta Salad




Since trying Mexican Street Corn last Summer, I have fallen in love with the flavor combination of corn, Cotija cheese, and Ancho and Chipotle chile powders.

I will admit that using canned corn saves a bit of time at the sacrifice of some flavor, so it is up to you to prepare the corn as you prefer. At this particular time, I went the canned corn route and it was delicious. Next time I will try grilled for a bit more flavor.

Many thanks to Cinnamon Spice & Everything Nice for this recipe. Instead of plain chili powder, I used Ancho chile powder which has great flavor. Chipotle chile powder would also be great.

Swedish Meatballs (IKEA Copycat)



Swedish Meatballs are a dish that I have tried making in the past that just didn't live up to my expectations. Recently I tried a recipe I spotted at One She Two She that completely blew me away. A mixture of ground beef and pork is the key to the most delicious little meatballs you've ever tasted.

I was a little bit worried that the sauce recipe contained no sour cream. Personally I like a little bit of tangy sour cream in a sauce like this, so next time around I might try adding just a little sour cream. As it is though, it is a light tasting sauce that works well with the meatballs.

My favorite brand for egg noodles is Country Pasta Homemade Style Egg Pasta. You can usually find them at Wal-Mart, but check their online locator for more stores near you. This style of egg pasta takes a bit longer to cook but they are nice and thick, perfect for Swedish Meatballs.

Notes:
-The gravy recipe makes just enough to cover the meatballs. If you want extra to serve over noodles, double/triple gravy recipe.
-We wanted a large batch to have in the fridge for leftovers during the week, so we doubled the meatball recipe and quadrupled the gravy recipe.
-We thought the leftovers the next day tasted even better. It seemed like the sauce absorbed flavor from the meatballs and tasted richer. When I tasted this immediately after preparing, the sauce taste was very light.
